You will need:

500g peeled potatoes chopped into 1 cm cubes
1/4 cup olive oil
Sea salt and cracked pepper
2 tablespoons of fresh rosemary sprigs

Prep:
Preheat oven to 220 degrees C.
Place cube potatoes in a mixing bowl and add olive oil. Lightly toss the potatoes until the oil is evenly distributed. Add sea salt, cracked pepper and rosemary and gently toss all ingredients.

Pour ingredients onto a non stick oven tray and bake for 45 mins in a 220 degrees C oven, turning potatoes frequently.

Rosemary potatoes are nice to eat on their own or with other roast vegetables.

You've so gotta try them.... they taste so delicious!! I find they work best using the purple skin potatoes Smile
